Abstract: Grapes (vitis sp.) are beneficial for health as they are rich in phenolic compounds. These and
other important compounds are affected by external factors which they are subjected to during
their development, such as sunlight, rain and altitude. The aim of this study is to verify the
influence of the climate from the city of Lavras (MG) on the chemical composition of different
Vitis labrusca grape cultivars. The grapes were harvested when they were ripe and the soluble
solids, titratable acidity, pH, ratio, phenolic compounds by High-Performance Liquid
Chromatography (HPLC), antioxidant activity using the DPPH * method and the climatic factors
of the Lavras region were evaluated over four years. The grapes from Lavras showed a low
soluble solids content, high acidity and a high content of phenolic compounds, mainly rutin. The
BRS Cora and BRS Rubea hybrid cultivars showed high antioxidant capacity among the six
cultivars analyzed and the Bordo cultivar had the lowest antioxidant activity. Climatic factors
from the region favored Vitis labrusca cultivars concerning the phenolic compound content. |
